What you will need:
1/2 large head or 1 med cauliflower, cut into florets
MCT oil or ghee
2 Tbsp coconut flour
1/4 cup nutritional yeast
1 tsp ground psyllium seed
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1 tsp onion powder
Optional: hot sauce
How to do it:
Step 1: Preheat the oven to 425 F.
Step 2: Line a large baking dish with parchment paper.
Step 3: Toss cauliflower into a medium bowl with enough oil to cover.
Step 4: In a separate small bowl, mix coconut flour, nutritional
yeast, ground psyllium seed, salt, pepper, garlic powder and onion
powder - add more oil as needed to soak up all the 'flour'.
Step 5: Bake for 25 minutes.
Optional: Put back in the bowl and toss with another 1 Tbsp of oil and
1 Tbsp hot sauce and then put back in the oven on the baking sheet.
Step 6: Stir every 5 minutes or so after that baking another 15 min
Step 7: Serve with dressing or sauce of your choice....or just more ghee and unrefined salt and pepper - because simple is just as delicious!!
