Delish Peanut Butter Cups

So you thought that peanut butter cups are bad for you? Nah, the only thing that makes them bad for you is when they are loaded with sugar, processed vegetable oils and milk powder.
These peanut butter cups are a superfood! Did you know that chocolate is the 4 most nutrient dense food on the planet? Yip, that's why I encourage my clients to eat it to their hearts content!
What you will need:
Chocolate part:
1 cup cocoa
1 cup coconut oil
3-4 Tbsp powdered erythritol
3 drops stevia
Peanut butter filling:
1/2 cup peanut butter
2 heaping (and I mean heaping) Tbsps of coconut oil
1 Tbsp coconut flour (optional)
3-4 Tbsp powdered erythritol
How to do it:
Step 1: Put all the chocolate ingredients in one small saucepan and all the peanut butter filling in another small saucepan.
Step 2: Melt on medium heat until smooth.
Step 3: Layer chocolate in the bottom of the cups and freeze for 10 min.
Step 4: Layer on the peanut butter mix and freeze for 10min.
Step 5: Layer chocolate on top of the peanut butter layer and refrigerate for about an hour or until solid.
Keep stored in the refrigerator (not freezer).
If you want them to hold up at room temperature, use cocoa butter instead of coconut oil.
